India celebrates its diversity. Language, clothing and fabulous food, all change within just a few hundred miles. There still are a few things that remain unchanged, love for Bollywood, Cricket and Daal! Daal (also known as Dal or Dhal) is made from lentils, cooked slowly over low heat, tempered with spices!
Lentils used can be split chickpeas (Chana Dal), split pigeon peas (Toor Dal), red lentils (Masoor Dal) or petite yellow lentils (Mung Dal). At times different combinations of these lentils too are used, in different proportions. The end result, perfectly cook daal. This savory delight is then tempered with different spices like cumin or mustard and aromatics (garlic, onions etc). Topped with clarified butter (ghee), this is something most Indians would have daily. Very rich in proteins and fiber, it is a very healthy!
