Tandoori is a technique of cooking. A cylindrical or a bee-hive shaped clay oven is used to cook meat, poultry, fish or bread.
In this technique of cooking, the meat/vegetable is usually coated or marinated with a paste of assorted herbs and spices, skewered into long metallic stick (called seekh) and cooked in the extremely hot and smoky conditions created by the tandoor. The tandoori cooking process very high temperature. This lets the food cook in its own juices, reducing the use of oil.
